He has built the wall sideways, using the technique called Studs Not On Top. This allows him to stack bricks, plates and studs to create a textured surface which wouldn't be achieved if the bricks were just built up regularly. and position the stacks horizontally using bricks with studs on their sides.
What really ties the technique together though is the dark tan plates between each layer. Although simple, these give the wall structure and indicate the cement between the layers of bricks.
